TMT is a midrange goodstuff format whose legendary-uncommon payoffs reward two-color decks with a splash, and the fixing at common (Escape Tunnel, Illegitimate Business, TCRI Building) is generous enough that the Bovine competes with utility lands for the fixing role rather than anchoring it. That competition sets the pick band: P1P5 to P1P7 in any green deck already committed to a second color, lower than the headline rate suggests because the format's fixing floor is high and a turn-three tap-land does similar work without spending a card on a body. Where the Bovine earns the slot is the toughness map. Common fliers here cap around 2/2 and 2/3 (Foot Ninjas-style bodies, the small evasive Sneak creatures), so a 0/4 in the air walls the entire common air force and shrugs off Bot Bashing Time.
BG Food and GU Artifacts want it most, and for the same structural reason: both reach for a third color to cast their best splashable uncommons, both run six- and seven-drops the Bovine accelerates honestly, and both can hide behind the body while RW and UR Sneak decks try to race them. A green-base three-color build wants it a touch higher, closer to P1P4, because a thin five-color manabase rewards every cheap fixer it can find. The punisher is Grounded for Life: tap the Bovine for mana and the white deck destroys it for one. Maindeck it in any green two-color deck splashing; cut it from straight GW or GR builds that already have their colors honest.
