The untap clause is the whole pivot. A team-wide +1/+1 pump at instant speed is a fine combat trick, the kind white has printed a dozen ways, but untapping the team rewrites what the pump costs. Cast it after your attackers have dealt damage and a board that spent itself swinging is suddenly upright again, ready to block whatever crosses back on the return swing. That is the move: the effect grants a kind of vigilance after the fact, retiming when your creatures are available and rewriting the math of who is safe to attack into. White goes wide better than any color, so the pump scales with a crowded board while the untap converts that same board from an offensive commitment into a defensive wall the moment it needs to be one. It answers the central tension of an aggressive deck, the choice between committing to the attack and holding back to defend, by letting the same creatures do both across a single turn cycle. It also untaps creatures you had tapped for activated abilities or convoke, freeing them to attack or block a second time. Dressed as a combat trick, it functions as a tempo swing: it erases the usual penalty for tapping out to deal damage, and it does the untapping at instant speed, when the opponent has already committed to a line that assumed your creatures were spent.
