The structural value is that it carries no color identity, so any deck short a flexible answer in its own colors can reach for it, and any way to blink or reanimate the golem fires the destruction again. The 3/3 left behind is incidental: a chump blocker, a Crew pilot at best. Read it not as a creature with a bonus but as a hard answer to a problem permanent that happens to leave a body on resolution, priced for the slot where a colorless deck is willing to wait until turn seven to erase whatever hurts it most.
